To give you an example if you had a 5-star level 50 champion that you wanted to take to level 6 you would normally need to have a total of five 5-star fodder champions to upgrade it. Chickens allow you to replace those fodder champions, so if you had two 5 star chickens you would only need three more fodder champions to upgrade a champion to 6 stars.
